Avanti International Resort is currently looking for a hard-working, efficient, accountable and goal oriented Director of Food and Beverage with experience in building and setting up Food and Beverage operation IN A HOTEL RESORT.

The qualified candidate will be responsible for managing the day to day operation for the Restaurant, Room Service and other food and beverage outlets as appropriate in order to achieve the highest quality service and guest satisfaction, while meeting/exceeding financial goals.   Additionally this candidate will control and manage all areas of cost management including food cost, beverage cost, salaries and wages, inventory control and product ordering.  This is a hands-on position that requires an individual to be involved with service on the floor. This position requires a strong culinary background with front of the house experience in dealing with guests.  

The ideal candidate has proven experience with building (or rebuilding) motivated guest focused teams within new or current hotel resort operations. Someone that is not hesitant about putting in long days or hours necessary to insure an efficient and well trained staff.  This Hands-on and Highly visible position is also responsible for resolving any guest opportunities that may occur in a cordial and professional manner with a positive attitude to do whatever it takes – a focused “will-do” attitude to do whatever it takes to insure the efficiency of a well trained staff to deliver high level of guest service.  

Some responsibilities include:   * Creative menu planning to include plate costing, presentation and execution. To include food and beverage.   * Product ordering to include food, liquor, paper products and any other departmental needs.   * Ensure appropriate equipment maintenance and sanitation standards are maintained as required by the State of Florida   * Work during meal service to evaluate staff, food temperature, appearance and portion control.   * Plan, execute and participate in special events and promotions to ensure success.   * Conduct inventory, purchasing disbursement and cost control for all operating supplies, food and beverage. Ensure that the FIFO system is used with all products.   * Maintain effective staffing and compliance with all Food and Beverage training and staffing benchmarks.   * Control the financial viability of the department to maximize profitability.  

Requirements:  

  • Previous Food & Beverage Management experience WITHIN A HOTEL RESORT. (5-7 years minimum)  
  • Food & Beverage related licenses and/or certifications as required by law. (Food manager’s certification)
  • Experience with revenue forecasting, marketing, catering and conference services. (Including all hands on aspects of conference services)  
  • Skilled in the proper and safe use of all tools, equipment, materials, chemicals and products related to the department.  
  • Bilingual (Spanish/English) a plus
