Essentials Duties
- Assists Executive Chef in the daily operation of restaurants and banquets. Includes the preparation and/or supervision of all foods in a sanitary and organized manner while consistently maintaining the highest standards of quality
- Assists in the training and development of all culinary staff
- Responsible for final walk thru of buffet set up & preparedness of action stations
- Assists in the creation of the annual budget and accountable for monthly inventory levels and food cost, recommends corrective action strategies to help assure that budget goals are met
- Involvement in the preparation of restaurants service period focusing on quality, consistency, food safety and timely service of all orders & parties
- Oversees scheduling and tracking of hours of the culinary staff as they relate to budgeted labor costs, makes appropriate adjustments as needed
- Works closely with all chefs for menu writing, costing and pricing in line with budgeted food cost for all restaurants and banquets
- Responsible for monitoring and maintaining kitchen cleanliness & equipment maintenance
Essential Qualifications:
- Minimum of 10 years culinary experience in an upscale restaurant, hotel or culinary operation
- Minimum of 5 years successful supervisory experience
- Must have experience in global cuisine and current trends
- Graduate of an accredited culinary program preferred
- Must be service orientated with great attention to detail
- Strong inter-personnel skills required
- Demonstrated leadership and team buildings skills
- Desire to continue to expand culinary ability
- Must be organized with strong time management skills
